Black Bean Brownies

   You may be thinking, "Is she serious...black beans in brownies?!"  Yes, it's true...you can use black beans in brownies to raise the fiber content to make them healthier.  I first heard about them when I was going through my Weight Watchers Leader Training in Chicago.  A fellow leader candidate (Thanks, Tim!) described how to make them.  I shared the recipe with some of my members and heard back from two who made them.  One said that the three men in her family are wanting more. Another member said her family couldn't tell their were black beans and loved how moist the brownies were.  A member shared that she used a gluten free mix and the brownies turned out great.
   So here's the recipe so you too can amaze and mystify your family and friends:
BLACK BEAN BROWNIES
     Use 1 can black beans, drain and rinse well, return to can. Add enough water to cover the beans (about 1/2 inch from top of can). Add to brownie mix and use electric mixer to mix well. (Some people puree the black beans and water before adding to the mix. I just use the mixer. Even if the black beans aren't totally mixed, the small pieces are usually mistaken for nuts. You really can't tell they're beans.) Bake according to the directions on the brownie mix. The PointsPlus value depends on the mix and the size of brownie you cut. I like to get the fudge brownie mix and cut it into 15 brownies for a PointsPlus value of 3.
